Observed bag of char siu pork in the prep cooler on the cook line measuring 46*F when measured with a probe thermometer. Per employee, char siu had been in the cooler since the morning. Inside walk in freezer, observed large stock pots of cooling pho broth that were frozen on top but liquid in the middle. Please ensure cooling must be in shallow pots/pan with lots of surface area to facilitate cooling. Once the product is cooled to the proper temperature, cover foods to prevent contamination from the facility.

PIC removed the towels at the time of inspection and replaced with clean towels in a quat solution.

Plumbing installed; proper backflow devices
PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap Observed drain pipes from shaved ice machine, ice machine, pre-rinse sink and dishwasher stored below the flood line of the floor sinks. Please provided minimum 1" air gap between the flood rim and the end of the pipe. Uni-strut may be used to support the pipe or to prevent the pipe from sagging. A re-inspection will be conducted on 10/12/2022 to ensure the drain lines have been raised.

This establishment is not participating in the award program at this time and had 3 Priority, 2 Priority Foundation and 3 Core violations on this inspection. A re-inspection will be conducted on 10/12/2022 to ensure Priority violation #49. A re-inspection will be conducted on 10/7/2022 to ensure priority foundation violation #23 and #46 have been corrected. This inspection was conducted with RS 1013. A copy of the report was emailed to the manager. No County legal action will result from this inspection.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
