PRIORITY VIOLATION-3-301.11, P: Preventing Contamination from Hands; Bare Hand Contact with Ready to Eat Foods---Observed employee handle cut lettuce for immediate service with bare hand. Employees cannot handle RTE foods with bare hands. Salad was discarded at time of inspection. PIC discussed bare hand policy with employee at time of inspection.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding---Found opened tuna, cooked chicken, cut lettuce, and opened cottage cheese in the reach in to the right of the serving line holding at 48-50 degrees F with probe thermometer (verified by PIC thermometer). PHF/TCS items must be held at 41 degrees F or below. Per PIC, unit temperature is checked but no temperature logs were available at time of inspection. Inspector max/min thermometer left in the reach in read 46 degrees F minimum temperature. PIC was unsure how long reach in unit had been out of temperature. All TCS items mentioned above were embargoed at time of inspection (see embargo form). PIC will use additional cold holding units until the reach in can be repaired.
