PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. At in-use mechanical warewashing machine, observed a chlorine sanitizer of 0ppm at food-contactsurfaces when measured with test strips. Chlorine sanitizer concentration shall measure 50 -100ppm for proper sanitization. Employee replaced empty sanitizer container. After priming and running several cycles, a chlorine concentration of 50ppm was achieved. Discussed, with Person in Charge, frequency of monitoring sanitizer concentrations and usage of test strips.
