Core-3-304.14, C: Wiping Cloths, Use Limitation >>> Behind service counter, below salsa bar, observed wiping cloths for food and non-food contact surfaces stored in a red sanitizer bucket with a chlorine concentration of 25ppm. Chlorine concentration shall be between 50-100ppm for proper sanitization. Discussed, with Person in Charge, monitoring wiping cloth bucket chlorine concentrations for proper sanitization. Chlorine sanitizer was remade to a concentration of 50ppm.
