Observed Queso Fresca and deli cut ham in cold display service case with no date marking. Ready to eat temperature control safety foods must have a pull date documented on product if open for more than 24 hrs. As per manager, product is normally used within 7 days. Pull date must not exceed 7 days from opening. Manager had staff add correct pull date. Advised manager to have staff place date packaged has been opened or date that opened product must be discarded.

During site visit no staff on site with a Certified Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation,Correct Prior to next Routine Inspection. Discussed Certified Food Protection Manager requirements, Person in Charges Certification recently expired and needs to be completed.
