Observed grey substance formation inside large ice machine by kitchen entrance. Food contact surfaces are to be cleaned at regular intervals to prevent the build up of old food, dirt and other debris. Person in charge is removing ice to clean ice machine tonight, PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed mechanical dish wash machine not sanitizing dishes. Chlorine sanitizer at sanitizer cycle to be between 50 - 150 ppm. Dish wash machine was primed and sanitizer was tested at 100 ppm.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Knives stored between steam table and sandwich prep cooler along grill lines, Utensils may be stored on routinely cleaned surfaces such as prep stations, easily cleanable containers or in water that is continuously held at 135*F. Utensils were removed to be washed.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Nikki M. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed with manager the use of digital thermometers for staff along grill line to easily verify hot and cold hold temperatures.
