PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Informed person in charge (PIC) of the absence of sanitizer. PIC stated they will call for maintenance on the machine, but in the meantime will use the three compartment sink for ware washing. A concentration of 50-100 ppm chlorine shall be used for ware washing. Test strips shall be used to verify the concentration of sanitizer while actively ware washing.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils -Observed push cart with large buildup of food residue/debris next to the chef prep table, adjacent to the hand wash sink. Push cart was being used to hold kitchen utensils and seasonings. Discussed with PIC that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability -Observed metal flashing behind the grill and fryers coming off the wall, exposing the wall to possible spills of food debris. The flashing needs to be repaired to allow for easy cleaning of the flashing and protection of the walls.

Core-6-403.11, C: Designated Areas-Employee Accommodations for Eating/Drinking/Smoking -Observed employee drinking cup (with straw and lid) stored above the chef prep table across from the grills/fryers. Discussed with PIC that employee drinks/food shall be kept in a designated area to prevent cross contamination of the food. PIC directed employee to move drinking cup to the designated area in the kitchen.
