Per establishment written procedures, the establishment must provide and maintain at least two pH meters and extra batteries at the establishment during hours of operation. Spare batteries for both pH meters must be maintained on-site during hours of operation, to prevent not being able to calibrate pH of rice. Please provide two working pH meters and additional batteries before re-inspection.

Core-4-602.13, C: Nonfood Contact Surfaces..........Top inside portion of flat prep table cooler, tracks of in use small prep table cooler, and prep tables shelves with accumulation of food residues and debris. At time of inspection, employee began deep cleaning soiled surfaces. Discussed more frequent cleaning to prevent residue build up. NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
