PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Behind the bar, at in-use mechanical dishwasher, observed a chlorine sanitizer of 0ppm at food-contact surface. Chlorine sanitizer shall measure between 50-100ppm. After several attempts of priming sanitizer and running cycles a proper sanitizing level could not be reached. Person in Charge (PIC) instructed employees to discontinue use of bar dishwasher and switch to kitchen dishwasher for proper sanitization. PIC contacted service vendor for dish machine before the end of the inspection. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. In walk-in refrigerator, across from dishwasher, observed two sheet pans of cooked pulled pork and one tub of cooked chili without date markings. Per Person in Charge (PIC), pork and chili were prepared on 2/13 (more than 24 hours prior). TCS (time/temperature controlled for safety) food shall be clearly marked to indicated the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Discussed with PIC proper date marking. PIC date marked TCS foods.
