In the walk-in cooler/48F, observed mashed potatoes/46-47F, house prepared ranch dressing/47F, chicken vegetable soup/49F, spinach dip/48F, tomato salsa/47F, marinara/47F, garlic mayo/47F, mozzarella/47F, cooked pasta/49F, provolone/48F, chicken stock/48F. Per manager, the problems with the walk-in were noted the day before. In small open salad cold bar, observed sour cream/46F, tomato salsa/47F, pico de gallo/47F, house prepared bleu cheese and ranch dressings/50F. Maintain cold TCS food at or below 41F. The manager voluntarily discarded the food and will use other available refrigeration moving forward until the units are repaired. See embargo.

Maintain refrigeration in good repair as needed. The person in charge indicated that the units would not be used until repaired. TCS foods were either discarded or relocated to other units holding at or below 41F. Email inspector proof of corrective action (repair receipts)within about a week.

Observed several dead fruit flies at the window. Use a licensed exterminator to effectively eliminate the insects, and thoroughly clean. Email licensed pest control receipt to inspector within about a week.

Discontinue storing items other that the ice scoop (with the handle up and out) in the ice to maintain proper sanitation of the ice. After instruction, worker removed the bottle.

Ensure the PIC is an ANSI-certified food protection manager and maintain the certificate available for review. This establishment is not participating in the award program at this time and had 2 Priority, 2 Priority Foundation and 1 Core Violations on this inspection. Upon inspection, a remodel has taken place which requires an application and plans to be submitted, and/or additional permits. Observed a new walk-in freezer and refrigerator installed in neighboring space, and the original kitchen walk-in freezer removed. Please submit an application, supporting documentation, and fees within 5 business days.
