Per PIC procedure is to blanch and then refry as needed for orders. Discussed with PIC about storing in the steam table or having a written policy for time as a control. Cooked wings were also being stored in fry baskets above the oil. Discussed storing in steam table. PIC had employee move chicken to the steam table.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence -- Observed a couple cockroaches near the mop sink and by ice machine. Per PIC pest control comes weekly. A re-inspection will occur on Tuesday May 28, 2019.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability -- Observed some tiles damaged/missing by ice machine. Replace to ensure floor is easily cleanable. Also observed openings in the walls by mop sink, employee restroom, and dish area. Discussed with PIC about having them sealed as a means of preventing pests. Core-6-501.12, C: Cleaning, Frequency and Restrictions -- Observed build up of food debris throughout establishment. Discussed with PIC about creating a cleaning rotation to ensure that establishment is cleaned frequently.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
