Observed raw pork ribs on shelf over cooked noodles on bottom shelf in reach-in fridge near walk-in freezer. PIC had employee place raw ribs in a container and move them to the bottom of the reach-in.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed 0 ppm chlorine bleach on glasses after north bar dishwasher was ran. PIC had employee replace bleach container for the dishwasher. Ensure dishes are being sanitized with 50-100 ppm chlorine bleach at all times.

Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. Time as control documentation not available at time of inspection for salsa on counter near the front of the kitchen. Per the PIC, salsa container is replaced with container of fresh salsa at least every 2 hours. Per the PIC, the salsa was last replaced less than an hour ago. Inspector reviewed proper time as control documentation procedures. PIC documented time salsa was removed from fridge and time that salsa will be discarded. Ensure proper time as control documentation is followed at all times.

Ensure pest control is only performed by a licensed pest control professional at hours that establishment is not in operation.
