Multiple Priority and Priority Foundation violations were noted on this inspection. Self service salsa refrigerator in customer dining area holding house made TCS products including red salsa, green salsa and pickled carrots with internal temperatures ranging from 52°F to 54°F. Ambient temperature of unit was measured at 55°F. Per PIC these items had been placed in unit approximately 3.5 hours prior to inspection. PIC was directed to have items moved to walk-in refrigerator for rapid cooling. Establishment will use portioned to-go containers of salsa until unit is repaired and capable of holding TCS foods at or below 41°F. Reviewed active managerial control measures to prevent future occurrences.

Per PIC, these items were prepared the day prior to inspection. PIC was directed to add date marks to all items requiring them. Reviewed AMC controls to prevent future occurrences.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods The following areas of the kitchen need maintenance/repair: • The drywall behind the bag-in-box rack next to the ice machine has significant water damage. • In the mop sink/water heater area, floor tiles are cracked, and the wall/coved base juncture is damaged. • At the exterior wall of the walk-in refrigerator above the door, the paint is peeling/flaking off. Core-6-501.12, C: Cleaning, Frequency and Restrictions The following areas of the facility have a build-up of food debris, dust or other matter and are in need of deep cleaning: • Floor sinks throughout the establishment. • Wall at the service window (kitchen side) as well as the fire extinguisher shelf. • At the back prep station with the metal table, the wall behind the table and shelf above the table. • In the walk-in refrigerator, floors at the floor/wall juncture and the exterior surfaces of the fan unit. • HVAC intake vents above the cook line.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
