Observed box of latex gloves in wait staff area of kitchen. Person in charge (PIC) stated the latex gloves are sometimes used to handle bread. Advised PIC that latex gloves shall not be used to handle foods due to possible latex allergies, and that only food safe vinyl type gloves shall be used. PIC removed the box of latex gloves and stated they will only use food safe vinyl type gloves.

Observed cutting boards in kitchen, discolored with heavy scoring. Advised person in charge (PIC) that cutting surfaces shall be maintained so they are smooth and easily cleanable. PIC stated they will have the cutting boards re-surfaced or replaced.
