PRIORITY VIOLATION-2-301.14, P: When to Wash. ======Observed preparation employee drinking with no lid beverage container with gloved right hand. With same contaminated right hand employee proceeded to grab pasta directly. Notified Person In Charge (PIC); PIC directed employee to take of contaminated gloves and wash hands appropriately. Also observed server continuously touch hair and side of face, and ears and proceed to work with open food salad and clean dishes. Notified PIC; PIC directed employee to wash hands appropriately. Also observed same preparation employee grab white towel from the the floor with left gloved hand. Employee with contaminated left gloved hand proceeded to directly touch cooled pasta. Notified PIC; PIC directed employee to wash hands appropriately. ======Employee not washing hands after drinking; and handling soiled equipment. Employee observed touching bare human body parts other than clean hands and clean exposed portions of arms. Compliance with variance, specialized process, & HACCP plan
Priority Foundation-3-502.12 (B), Pf: Reduced Oxygen Packaging, Criteria; HACCP plan requirements. =====Observed inside ROP logbook establishment on 8/2/2021 cooked and chilled Fagoli at 90*F first entry,; however ROP food log was incomplete documentation of reaching below 40*F in the specified time. Also establishment had another 3 soups that day with no temperature documentation at all. Notified Person In Charge (PIC); PIC will review policy and procedures with management team regarding HAACP ROP logs completion. PIC will document corrective actions on the 8/2/2021 log. =======Section 3-502.12 of the Food Code provides the criteria that are to be met in the HACCP plans of those operators who are conducting reduced oxygen packaging (ROP) operations. Unless prior approval of the HACCP plan is required by the regulatory authority, the HACCP plan covering this operation along with the related records documenting monitoring and corrective actions need only be available and acceptable to the regulatory authority at the time of inspection.
