PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. =====Observed on the main cook line one three door refrigeration unit with cooked pasta in temperature danger zone (41*F-135*F). Internal temperature of pastas in first 2 doors was 51*F-57*F. Notified Person In Charge (PIC). PIC confirmed and verified internal temperatures. Per PIC the units electrical was tripped and was not in working order at time of inspection. PIC reset the unit. Unit will not be used until ambient of 41*F is reached. Also observed small drink refrigerator on the weekend station with ambient temperature at 47*F with min/max thermometer. TCS milk was at 47*F-48*F. Per PIC the station was stocked after 10am. PIC discarded any milk and moved all sealed milk to main walk in to cool to 41*F. PIC will discontinue usage of the drink refrigerator until it can be repaired.====== Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. No County legal action will result from this inspection. Person In Charge verbally acknowledged Inspection Rights. Mario C. Print out copy of Inspection Report was provided to the establishment. HACCP logs for the following dates were reviewed: 3/14, 4/1, and 5/9. Reviewed and discussed: cold holding equipment maintenance. Recommend: installing digital thermometers to both three door refrigeration units on main cook line as well as two drink refrigerators on server station areas.
