Priority Foundation-3-501.15 (A), Pf: Cooling Methods. ===> Observed several recently prepped to-go salads stacked and packed tightly in the reach-in refrigerator at the to-go prep area. The containers of salad were prepped 3 hours prior to inspection and had an internal temperature of 47F or greater. PIC instructed employee to place the salads into the walk-in cooler. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. PIC will retrain employees to use the walk-in cooler to cool TCS foods. Discussed locating the water source for the RO tank in the bar. Discussed employee beverage storage. Calibrated thermometer. Reviewed HACCP logs for 10/20/2022, 10/27/2022 and 11/1/2022. No County legal action will result from this inspection. The inspection report was emailed and confirmed during the inspection.
