PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ===> Observed cooked fettuccine, small shells, tortellini and ravioli cold holding in the far left refrigerated drawer unit on the cook-line, with internal temperatures of 45-53F, probe thermometer, verified by person in charge (PIC). According to PIC, the pastas were placed into the refrigerated drawers an hour prior to the inspection The pastas were rapidly cooled to less than 41F in the freezer or an ice bath, during the inspection. The refrigerated drawers observed with an ambient air temperature of 42F. PIC will monitor the temperature of TCS foods. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Discussed the procedure for air-drying recently washed dishes. Calibrated thermometer. No County legal action will result from this inspection.
