Priority Foundation-5-205.11, Pf: Using a Handwashing Sink-Operation and Maintenance. >>> Observed the handwashing sink in the prep area to be blocked by the rolling breadstick rack and food containers inside of the sink. PIC moved the rack and employee removed the containers from the hand sink. Discussed retraining employees to keep hand washing sinks accessible for use at all times. Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. >>> Observed cooked fettucine, spaghetti, cheese stuffed tortellini and ravioli cold holing in the window #1 refrigerated drawers with an internal temperature of 46-51F, probe thermometer, verified by PIC. PIC will discard the pastas or they will be served within 2 hours. The cold drawer unit was not turned on because of a tripped breaker and the pastas were placed into the unit 1-2 hours prior to inspection. Discussed ensuring that line checks are routinely done. Suggested storing a thermometer inside of a drawer and also checking the digital display to be sure that the unit has power. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. A pattern of non-compliance for Priority violation #20 has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Calibrated thermometer. Reviewed HACCP logs for 01/17/23, 02/01/23, 3/5/23. No County legal action will result from this inspection.
