The thermostat was adjusted, and the ambient temperature dropped several degrees at the time of inspection. Staff will continue to monitor the unit to ensure it can maintain TCS food at or below 41F or will transfer the TCS food to other available refrigeration on site.

Core-4-205.10, (C) Food Equipment, Certification and Classification........Observed walk-in cooler that is not ANSI-accredited being used to store TCS food items like cheese, butter, tomato salsa, tortilla soup. raw animal proteins, sour cream, milk, eggs, etc. Please continue to work with MCESD Plan Review program regarding the pending remodel. Contact Plan Review within 5 business days. 3rd Consecutive Violation Core-2-102.12(A), C: Certified Food Protection Manager.....The person in charge (PIC) on site is not an ANSI-certified food manager. Ensure the PIC is an ANSI-certified food protection manager and maintain the certificate available for review. 4th Consecutive Violation This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation violations on this inspection. Due to the violations noted on this inspection report, County legal action may result from this inspection. Inspection conducted with RS#1197. Operator was reminded that the small room off the kitchen is not approved as a toilet room because of the lack of a handwashing sink in the room. It is also not approved for food storage purposes because a toilet remains in the room. Confirmed the emailed report was received. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
