Observed raw beef and chicken in two door refrigerator by fryers at 45*F. Cold hold of food to be 41*F or cooler. As per the person in charge, the doors are open a lot during meal times and unit may warm up. Advised person in charge that food needing to be cooled should be placed in the walk in cooler. All other foods in refrigerator were at 41*F. Observed pork dumplings in prep cooler across from woks at 50*F. The person in charge discarded dumplings. Advised person in charge that food item should not be stored out of cold hold for long period of times at lunch and dinner. Staff may choose to use time as control like the sushi rice for this type of food item.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Observed unclean wire racks with some old vegetation and other food items in walk in cooler. Observed unclean top of convection oven near the fryers in the kitchen. Surfaces must be cleaned at regular intervals to prevent build up of old food and dirt.
