Observed items at Buffet table at temperatures less than 135*F: fish 130*F. Fried Bananas 125*F, and Eggrolls at 120*F. Hot hold food items must be held at 135*F or greater. As per owner of establishment items are only out at buffet for less than two hours. Items were brought back to kitchen and reheated to 165*F. Advised owner to have staff monitoring buffet tables take temperatures of food throughout the day.

Observed cooked and cooled chicken in walk in cooler at 47*F. As per manager chicken was brought out to prepare in morning and placed back in walk in cooler. Chicken was embargoed and discarded. Observed chicken in reach in cooler by fryers at 44*F. Chicken was moved to back part of reach in cooler to cool to 41*F. Advised owner to monitor temperatures more frequently.

Core-4-101.11 (B-E), C: Characteristics-Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable Observed eggrolls in upright reach in refrigerator next to fryers stores in a reused cardboard box. Observed ingredients chopped cabbage, celery, carrots on cardboard box on prep table. Cardboard boxes are absorbent and not easily cleanable and can not be used for storing food items after their initial use.

This establishment is not participating in the award program at this time and had 3 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. A pattern of non-compliance is developing for Priority violation # 20, 3-501.16(A)(2) and (B), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Verbally discussed Notice of Inspection Rights with Eric L. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
