Observed deep, covered pans of buche and carnitas in middle shelf of walk-in refrigerator. Please ensure cooling foods are stored in containers that will facilitate the cooling process. Meats were within parameters for proper cooling times. Person in charge (PIC) moved meats into shallower pans on higher shelf in walk-in to correct.

This establishment received an A Grade and had 0 Priority, 0 Priority Foundation and 3 Core violations on this inspection. Inspection rights accepted by Betsy G. Report e-mailed to owner. Person in charge (PIC) indicated that they are currently enrolled in Food Protection Manager coursework. Provided cooling guidance documents via e-mail. Inspector emphasized the importance of verifying that date-marking is accurate for all ready-to-eat TCS foods. No County legal action will result from this inspection. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
