Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - TCS food items such as meats and cheese found in main prep cooler with internal temperatures ranging between 41-49*F. PIC stated all the items had been in the cooler since yesterday. PIC was made aware that the cooler was not working properly and ice bathes were being used to cold hold the items in the top portion of the cooler. PIC stated they came into work at 9:00 AM to find all the ice had melted and the internal temperature of the food items were between 44-49*F, and put the items back on ice. Temperatures were verified with both PIC's and inspector's calibrated probe thermometers. Inspector discussed the risk of the possible extended time period over night that the food may have been in the danger-zone and PIC voluntarily discarded the food items (see embargo form). Please ensure cold held TCS food items are maintained at 41*F or below.

Ice bathes are being used on the prep cooler to cold hold TCS food items. The wing freezer and cooler are also not working and were unplugged during the inspection. Wings are currently only being stored in the main walk-in cooler. The A/C is currently not working in the building which may be contributing to the coolers not being able to maintain cold temperatures. Please have these coolers repaired/replaced and ensure they are able to maintain an ambient temperature of 41*F or below prior to re-inspection within 10 days.

Coved base and corner of wall near dish machine is damaged and exposes the internal wall. Cove base tile missing in men's restroom corner. Corner panel near main prep cooler missing and wall panel is bending away from the wall. Damaged coverings and caulking at mop sink. Please repair to provide smooth and easily cleanable surfaces prior to next routine inspection. Core-6-501.12, C: Cleaning, Frequency and Restrictions - Debris accumulation under front counter and oil build up on the wall behind the pizza box (old prep station area). Please cleaning these areas prior to next routine inspection. ***2nd consecutive violation***
