Observed containers of chopped ham and cooked sausage in upper section of pizza prep refrigerator measuring 48 - 50 degrees F. All other food items were 41 degrees or below. Person in charge (PIC) stated the food items had been in the refrigerator since the previous day; greater than 4 hours. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. PIC discarded the food items and stated they will ensure TCS foods are held at proper temperatures.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Observed dried food debris on wire rack shelves of proofer and wire storage racks underneath pizza cutting area where clean cutting utensils are stored. Advised person in charge (PIC) that non-food contact equipment which hold containers of food and utensils must be maintained so they are smooth and easily cleanable, and does not contaminate foods stored on wire rack shelves. PIC stated they will have the wire racks cleaned.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed broken and missing pieces of cove base tile on floor/wall juncture in walk-in refrigerator. Advised person in charge (PIC) that flooring/walls shall be maintained in good repair to ensure they are smooth and easily cleanable. PIC stated they will have the tile repaired.
