PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. >>Observed containers of tomatoes and pepperonis measuring between 46*F and 48*F on the right side of the prep cooler. The ambient temperature of the inside of the prep cooler was 46.8*F. Person in charge (PIC) stated that the items were stocked two hours prior and were moved to the walk-in to cool to 41*F. All TCS (time/temperature control for safety) items were moved to the left side of the cooler as a temporary solution until the cooler could be services. PIC filled the bottom reservoir with ice to ensure that all TCS items are kept at 41*F. Ensure that all TCS items are held at 41*F or below for proper cold-holding storage. All TCS items were rearranged and the bottom reservior was filled with ice to ensure that items are kept at 41*F or below. Ensure that all units are properly operating so that TCS items are held at 41*F or below for proper cold-holding storage. A re-inspection has been scheduled for 04.21.2023.
