Notified Person In Charge (PIC). PIC confirmed internal temperatures. Per PIC the walk in unit was at 39*F at open. Thermometer display is at 46*F. Directed PIC to move all tcs foods listed to move to other walk in to cool to 41*F. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Notified PIC; PIC could not recall date. PIC discarded container of cooked chicken wings with no date markings. ======A food shall be discarded if: It exceeds the 7 days at 41?F. A pattern of non-compliance is developing for Priority violation # [20 ], [3-501.16(A)(2) and (B)], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Core Violation #53 W was noted on this inspection. Provided Maricopa County: Date marking; cold holding; tcs foods. Inspection report emailed and verified. Reviewed and discussed: handwashing procedures. Recommend: maintenance on small walk in refrigerator. Adjust and document defrost times. An audit of food handler certificates resulted in 5/5. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
