Observed house made minced garlic with oil placed stored in an out of service prep refrigerator. The garlic measured with an internal temperature of 56 degrees F. Per PIC, the garlic had been stored there for approximately 2 hours. The garlic was placed in a different prep refrigerator able to maintain food temperatures at or below 41 degrees F.
