Deli meats in sandwich prep cooler at 49*F. Cold hold of food to be 41*F or lower. Store manager had staff removed product and discard. Sandwich prep cooler appeared to have frozen over and was not able to maintain food temperatures below 41*F. Store manager planned to turn unit off to defrost and turn back on once completed. Store manager will verify unit is holding food at 41*F before using equipment.

This establishment is on the Cutting Edge of food safety and was awarded an “A” grade. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was a staff verification breakdown, which resulted in the violation.
