Observed onion/tomato dicer placed away as clean on drying rack with fuzzy white organic debris buildup underneath black plastic part. Per PIC, this dicer was cleaned. When brought to attention, PIC started cleaning the onion dicer that was disassembled. Ensure all food contact surfaces are thoroughly cleaned and completely taken apart when during the cleaning process.

Observed large metal container of rice inside a bag on top of hot holding unit at 88-90 degrees F. Per PIC, the rice was made 3 hours prior to inspection, the rice was placed in a bag immediately after cooking, and placed in metal container 25 minutes after cooking. Per PIC, they intend to use time as a control for the rice but do not have any documentation showing the time that the rice was made. PIC discarded rice. Ensure proper time control and documentation at all times.

Please make the necessary repairs to ensure these surfaces are smooth and easily cleanable.
