PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed the Chlorine sanitizer with a concentration level testing under the required specifications of 50 ppm - 100 ppm. Spoke with person in charge on how they make the chlorine sanitizing solution and they had stated that they use a mixture of bleach, water, and soap. They currently are not using a bleach and water sanitizing solution to sanitize the dishes. Discussed with person in charge on the importance of have a sanitizing solution when washing dishes, as well as how to make a proper chlorine sanitizing solution. Person in charge had created a sanitizing solution that had tested within the proper range of 50 ppm - 100 ppm. Training shall occur to verify that employees are aware on how to make a chlorine sanitizing solution within the proper range of 50 ppm - 100 ppm and how to test it.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed the ice machine with a cracked lid and missing pieces on the inside. Spoke with person in charge on how long the ice machine lid had been cracked. Person in charge had placed a work order for the lid inside the ice machine to be fixed. Please repair or replace the machine as soon as possible.
