PRIORITY VIOLATION-3-301.11, P: Preventing Contamination from Hands; Bare Hand Contact with Ready to Eat Foods. PIC washed hands, put on gloves and then remade the burrito with a new tortilla. PIC stated they were unaware of this rule changing. Thought that as long as hands were washed exactly prior, that it was ok. Hands shall be washed and gloves worn when touching any food product that is not cooked prior to service.

Inspection report sent be email. Inspection conducted with RS #789. Core-2-102.12(A), C: Certified Food Protection Manager -- PIC does not have current food manager certification. A certified food manager shall be present whenever the establishment is open and serving food.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
