PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Chlorine test strips were available and easily accessible. There was a "do not use" sign on the dishwasher, however the dishwasher was being used while the sanitizer container feeding the dishwasher was empty. Please ensure that dishes are sanitized at the 3 compartment sink if dishwasher is used (unless if the dishwasher yields a chorine concentration between 50-100ppm after final rinse). The quat solution at the 3 compartment sink was between 200-400ppm and establishment had quat test strips.

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition ----- Observed excess build-up of grease on hood ventilation filters over the fryers. Advised PIC to clean filters at a frequency that doesn't allow buildup of grease to where it drips behind the fryers. Filters that collect particulate matter must be cleaned or changed frequently to prevent overloading of the filter.
