Person in charge (PIC) stated they did not know when it was last cleaned. Advised (PIC) that in-use equipment which processes time/temperature control for safety (TCS) foods must be washed, rinsed, and sanitized every 4 hours. PIC moved the milkshake blender to be washed, rinsed, and sanitized.

Employee stated the lettuce was refilled within the last 30 minutes. Person in charge (PIC) stated they refill and hold the lettuce in the areas until it is used up. PIC also stated they use time as control for the lettuce, but did not have a recorded time stamp when lettuce was left out of temperature control. Advised PIC that the cut lettuce is a time/temperature control for safety (TCS) food which must be held below 41 degrees F; or if using time as control, food must be clearly marked with the time left at room temperature to ensure food is not held above 41 degrees F for more than 4 hours. PIC labeled the cut lettuce with the time it was refilled and stated they will ensure any left overs are discarded after 4 hours.
