Observed large covered plastic containers of cooked breaded chicken filets and strips in walk-in refrigerator measuring 49 - 51 degrees F. Person in charge (PIC) stated the chicken had been in the refrigerator since the previous day; greater than 4 hours. All other food items in the walk-in refrigerator were below 41 degrees F and ambient temperature inside the walk-in refrigerator was 37 degrees F using min/max thermometer. Additionally, observed packages of sliced American/Swiss cheeses, sliced ham, and cooked rice in small reach-in refrigerator, at entrance of sandwich prep area, measuring 55 - 57 degrees F. Employee stated the food items had been in the small refrigerator for more than 4 hours. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. Employee discarded the food items and PIC stated they will ensure TCS foods are held at proper temperatures.

Observed ambient temperature of small reach-in refrigerator, at entrance of kitchen sandwich prep area, measuring 55 degrees F using min/max thermometer. Advised person in charge (PIC) that refrigeration units which hold time/temperature control for safety (TCS) foods must hold such foods at 41 degrees F or below. PIC placed a "Do not use" sign on the refrigerator, and stated they will have the refrigerator inspected and/or repaired. No TCS foods are to be held within the refrigerator until the unit is holding foods at 41 degrees F or below. PIC stated they will use other properly operating refrigerators until refrigerator is working properly.

PIC stated they will have the refrigerated drawer repaired.
