Observed plastic containers of sliced tomatoes, covered and stacked on top of each other, in walk-in refrigerator. Sliced tomatoes measured 48 - 51 degrees F. Person in charge (PIC) stated the containers of sliced tomatoes were prepared and placed in the refrigerator within the last hour. Advised PIC that when cooling time/temperature control for safety (TCS) foods, such as sliced tomatoes, containers shall be properly vented and separated to ensure sliced tomatoes cool to 41 degrees F within 4 hours. PIC unstacked containers and partially removed lids to properly cool sliced tomatoes.

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed an accumulation of grease behind main grill. Advised person in charge (PIC) that areas underneath/behind equipment shall be cleaned to sight and touch and at a frequency to prevent grease and debris build-up. PIC stated they will have the areas cleaned more thoroughly and frequently.
