PIC supplied paper towels at time of inspection. Hand drying towels must always be available at all hand washing sinks. Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing.

The lettuce had an internal temperature of 50*F at time of inspection. PIC stated that the lettuce had only been out for less than 30minutes.Reviewed with PIC and employees that time stamps, whether using the digital timer or time stickers, must always be placed on TCS food items as soon as they are removed from refrigeration. PIC set a new and adjusted timer for the lettuce.

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition ----- Observed excess build-up of grease dripping from the hood ventilation filters over the grill. Advised PIC to clean filters at a frequency that doesn't allow buildup of grease to where it drips over the grill. PIC stated that filters will be cleaned often. Filters that collect particulate matter must be cleaned or changed frequently to prevent overloading of the filter and ventilation system.

This establishment received a(n) B Grade and had 0 Priority, 2 Priority Foundation and 2 Core violations Core-2-102.12(A), C: Certified Food Protection Manager ---- No certified food manager present at time of inspection. Discussed with person in charge that there needs to be at least one Certified Food Manager at the establishment at all time during business hours.
