PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. =====Observed multiple tcs food items in temperature danger zone (41*F-135*F) inside countertop refrigerator unit in between the deep fryer station and grill flat top. Cut lettuce at 44*F; cooked tacos at 44*F-52*F; egg rolls at 44*F. Notified Person In Charge (PIC). PIC confirmed and verified internal temperatures. Per employee most tcs food items were brought from main walk in refrigerator to the unit around 8am. One sealed package of cooked tacos were inside unit from previous day. PIC discarded the tacos from yesterday. All other items listed were put into main walk in to cool to 41*F. Time of inspection is at 11am. Ambient temperature of the unit is at 49*F-52*F with min/max thermometer. ============Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Notified Person In Charge (PIC). PIC at this time has elected to not use the unit. Unit will be closed down. ========All cold holding refrigeration needs to have ambient temperature of 41*F or below to maintain tcs foods 41*F or below.
