Observed employee handling several racks of ribs in three compartment sink wash compartment, with dirty dishes on side of sink and chemical dispenser hose moved out of the compartment. Observed no visible contamination of ribs. Person in charge had employee move to food prep sink. Food prep sink must be used for food prep and ware washing sink must be used to wash items separate to minimize risk of contamination.
