Observed employee on food prep line pick a piece of paper off floor then go back to preparing a sandwich without washing hands. Advised person in charge (PIC) that employees must wash hands whenever changing tasks from handling food, such as picking something off of floor, to prevent contamination of foods. Employee discarded the sandwich bun and properly washed hands.

Advised person in charge (PIC) that areas underneath equipment shall be cleaned to sight and touch and at a frequency to prevent debris build up. PIC stated they will have areas underneath equipment cleaned more thoroughly and frequently.
