Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed exposed wood on edges of lower cabinet door, beneath soda fountain machine at drive-thru station. Additionally, door is being held in place with a folded piece of cardboard. Advised person in charge (PIC) that nonfood-contact shall be maintained in good repair and constructed of a corrosion-resistant, nonabsorbent, and smooth material so it is easily cleanable. PIC stated they will have the door replaced or repaired.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Observed back steam well, behind taco prep steam table, with an accumulation of dried food debris. Advised person in charge (PIC) that that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris to prevent contamination of foods. PIC stated they will have the steam well cleaned.

PRIORITY VIOLATION-5-402.13, P: Conveying Sewage Observed floor sink of prep sink in back kitchen area, between walk-in refrigerator and walk-in freezer, filled and not draining. Floor drain was not overflowing and other floor sinks in the kitchen were draining normally. Person in charge was unable to manually clear the floor sink. Advised PIC that floor sinks and plumbing shall be free/clear and drain normally to prevent back-ups and contaminate premises. PIC placed a work request to have the floor drain cleared.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed broken floor tiles underneath fryer in back kitchen chicken prep area. Additionally, observed cove base along wall in center walk-in refrigerator, coming away from wall with seals broken. Advised person in charge (PIC) that that walls and surfaces shall be maintained in good repair to ensure they are smooth and easily cleanable. PIC stated they will have the floor tiles and cove base repaired. Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed debris underneath wire storage racks in walk-in refrigerators and underneath equipment throughout kitchen. Advised person in charge (PIC) that areas underneath equipment shall be cleaned to sight and touch and at a frequency to prevent debris build up. PIC stated they will have areas underneath equipment cleaned more thoroughly and frequently. 3RD CONSECUTIVE VIOLATION.
