Equipment Inspection. Project nearly complete. Walked with contractor, owner, and chef. Establishment is approved to stock and train, but not to serve the public at this time. Correct the following items for permit approval: 1) Install an RPZ backflow preventer (ASSE 1013, such as a Watts 009) on all water lines to combi oven. 2) Shorten drain line from water softener so that it has a 1” air gap at mop sink. Also ensure drain line terminates over mop sink fully – use an elbow if necessary. 3) Install metal cove base along wall at hood area. 4) Install cove base in dry storage and mop sink rooms. 5) For other effective means of barrier protection, install fly bait stations in the outdoor garbage area, along the patio planter area, near windows that can remain open, near front doors. No County legal action will result from this inspection. Report emailed.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
