Observed in use high temperature sanitizing dish washing machine at a final rinse temperature of 157*F measured by cooper min max thermometer. Person in charge informed when using high temperature sanitizing ware washing machine the minimum temperature shall be at minimum 165*F. Person in charge moved all dish washing and sanitizing to three compartment sink at time of inspection.

Person in charge informed they shall have test strips to measure concentration of sanitizer solution at all times.

This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation violations on this inspection. Re-inspection Scheduled for 3/6/2023 for violation #46 1) Provide test reports for all testable backflow preventers (RPZs at combi oven, RPZ at glass rinser). Backflow must be repaired if tests fail. Backflow must be tested yearly. Maintain certificates on site for verification. 2) Switch out flexible drain lines (espresso machines, glass rinser) for hard pipe drain line as much as possible. 3) Provide minimum 1" air gaps for all drain lines in front service area (espresso machines, ice bins, glass rinser, sinks) above flood rim of bottom cabinet. 4) Finish completing Other Effective Means (OEM) of Barrier Protection Requirements, including adding fly bait stations etc. and creating a pest sighting log and employee training statement. Do not use continuous openings until OEM is approved. No County legal action will result from this inspection. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
