Inspection Comments

Plumbing inspection conducted with site superintendent, Brian. At the time of this inspection, this project was about 20% complete. Inspection report was emailed to Brian. Prior to final: 1. Provide a NSF approved hand wash sink visible to the ice machine area as discussed. Discussed installing a hand wash sink on opposite side of wall of current hand wash sink to be in code requirements for easy to access and visible from all areas of work. 2. Provide air curtains (1 or mulitple to cover opening) that are micro-switched to turn on automatically when large garage style door is opened. Accordion style doors at bar have been removed and solid windows are installed. 3. Provide an ASSE 1013 reduced pressure assembly upstream of carbonator for soda system and upstream of RO (if applicable). Both will need a drain cup plumbed to a floor sink with 1 inch air gap above finished floor. 4. Ensure cove base installed through kitchen, bars and food storage areas. 5. Floors in kitchen, bars and food storage are to be well sealed so that water beads. Recommend lighter seal in customer area to prevent staining of concrete. 6. Under counter lighting is to be installed in speak easy bar. 7. All counters are to solid surfaced. Superintendent stated that all are solid type. Dedicated water line has been added at mop sink. Went over plan review letter with superintendent and discussed all comments. Please continue with construction according to plans, stipulation letter, and inspections. No county legal action will result from the inspection.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
