Second Walk though with the superintendent. The following was discussed: 1). No coved base required in dining area. 2). Dup sink has been omitted at the bar. Install if you need. 3). Install a splash guard on the left side of the bar sink. 4). Install drain lines, hand wash sink, ice bun dish washer, lead back to the wall and then over to the floor sink, then forward and elbow down, maintain gravity flow and properly brace. Follow this throughout. 5). Finish out he edges of the floor sinks. Smooth out the edges, ramp up and water seal. 6). Bars will have a cleanable ceiling. 7). All floor sinks throughout will need to be finished out. 8). Note that the glasswashers (#71 and #92) drains will need to transition into rigid lines and then lead to the floor sink. Maintain an air gap. Split the line at the floor sink if over splash occurs. 9). Install a fly fan or air curtain over the overhead rolling door. 10). In the cooler, if you want you can omit the stainless coved base. Unit will have a TPO roof. 11). Stainless coved base will be installed throughout the kitchen and restrooms, base will be sealed to the floor at top and bottom. 12). In dish wash area make sure all backfill is complete so there are no holes or depressions under the walls. 13). After the bar substrate is installed, caulk the joint FRP and pony wall. 14). We will have to see if the middle stall in the restroom has enough light, if the spot lights are directional down then install one more fixture. The stall will otherwise create too much of a shadow in the stall. 15). Walk-in will be flashed on the in and outside. Flashing will be sealed and water tight. 16). Inside the walk-in make sure to caulk the top wall/ ceiling juncture with a bead of silver caulk/silicone. 17). Please install an additional light in the dish wash area over the pre-wash station. 18). Restroom doors will have self closers. There is no soda system planned. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
