Inspection Comments

Pre-final inspection walk through with the superintendent. The following items will need be corrected before final inspection: 1). Install the fly fans with micro switches over the back door and patio sectional door. Goal to provide 1600 cfm around 3 feet from the floor. Aim louvers 1-3 % outward. At the front bar: 2). Brace the dish washer line to the wall, legs allow this there and lead to floor sink following gravity flow. 3). Secure dishwasher flex drain to PVC pipe. 4). Brace the hand sink drain line to the legs. 5). Line up ice bin drain with drain grate opening at the first bin coming into the bar. 6). Adjust the flex drain of the ice machine bin under the ice machine and lead to floor sink following gravity flow and an air gap. 7). Floor around floor sinks in the bar need to be smooth and easily cleanable. 8). Wood panel at bar entrance will be painted out and then siliconed to the floor. 9). At the bar, provide a full size drain grate for the abandoned floor sink. 10). Install an expandable plug in the abandoned floor sink. It is okay not to install drains on the glass racks. The owner can decide later if that is needed. Kitchen 11), Ice bin drain line will need to clear the floor sink with and inch. I would do both, use a screw on elbow and then lead to the floor sink instead of threaded connector. 12). A RPZ valve will be installed for the mister system. Install with hub drain. 13). All backflow valves will be tested and certified before final, provide test reports. 14). Caulk the dishwasher hood at the back wall juncture. 15). Provide two missing escutcheon plates at the water softener. 16). Raise the backwash drain line of the water softener and shorten (1 inch air gap). there is no need to run it to the center of the mop sink. Caulk abandoned brace holes. 17). Walk in unit will be flashed off at the sides. and top at the side wall. 18). Air handler drain line will need to be lined up with the floor sink (corner walk-in) 19). Mount the gas line escutcheons. 19). Caulk the counter cap at the underside FRP juncture where open. 20). In the back kitchen, finish out the floor sink edges. Provide a smooth and easily cleanable surface. 21). Repair light in the walk-in. 22). One additional light fixture will be installed at the dish pit. 23). Where FRP is cut wide at the outlet covers, two locations, finish out. West side bar 24). Drain lines and faucets will be installed, follow guidance set for main bar. Conditional use is granted pending hand wash sinks are in place in the restrooms and light is working in the walk-in, west side bar should remain off limits. Stock an d train means only store staff and delivery personnel is allowed in the store. No public food service allowed. Store is okay to stock and train after City approval. No County legal action will result from this inspection. Final inspection, store completion, is scheduled for next week Thursday. Printed on site.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
