Equipment inspection Construction is about 75% complete Walked site with Chad A Address the following items: (1) Provide a separate cold water hose bib at the mop sink for chemical dispenser connections. Hose bib required even if no chemical dispensers will be used (2) Provide an RPZ backflow assembly (ASSE 1013) for the carbonated beverage system. ok to route funnel/drain to the mop sink. Have backflow tested. (3) Caulk the hoods where the meet the walls. Use metal colored silicone (4) Flash off the sides and top of the walk-in where it meets the t-grid (5) Smooth out the concrete in the area under the front service hand sink. Concrete to be smooth and sealed. (6) Fill in the joints in the concrete flooring throughout (7) Caulk the gap and paint the exposed wood under the counters (8) The vertical sneeze guard must measure at least 60 inches, from final floor finish to the top of the glass. Side returns required. (9) Provide a 3/8 inch radius coved base at the floor/wall junction in the restrooms. (10) Ensure efficient lighting in the back area of the prep sink, 3 comp sink, and hand sink. (11) Provide an inline dual check valve (ASSE 1022) for each coffee, tea brewer if any (12) Route walk-in condensate drain to the exterior floor sink. (13) Install self closing devices on the restroom doors. For final approval, have all work completed, have hot water to all sinks, have all refrigeration maintaining proper temperatures, and obtain all local municipality approvals to include C of O. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
