Plumbing Inspection - Cafeteria - FD-23-01726 This inspection was conducted with the on site superintendent. A PDF copy of this inspection report was emailed to Austin L. at the time of this inspection. No county legal action will result from this inspection. Address the following prior final permit approval; 1. All chemical dispensers installed on water supply lines must have proper air-gaps or testable backflow prevention devices installed. 2. Provide a metal cove base finish at the floor/wall junctures on the inside and exposed outside portions of the walk-in units. 3. Provide a cove base finish at all floor/wall junctures throughout the kitchen. 4. Provide waterproof floors throughout the kitchen. 5. Provide a certified, RPZ backflow prevention device for the water supply line to the combi-oven and any steam cookers connected to water supply lines. 6. Provide microswitch activated air-curtains to the doors of the cafeteria that open to the outside, including the large rollup door. 7. Provide a sneeze guard with side panels for protection of all exposed food along the serving counters. All sneeze guards are approved on a case-by-case basis and require final on-site approval. 8. Submitted Plans indicate a reverse osmosis (RO) system will be installed for the Alto Shaam Combitherm CTP7-20E oven. Provide an approved reduced pressure principle backflow preventer for reverse osmosis (RO) systems. The backflow device must be installed between the water supply line and the RO system. All conduit and fittings on the downstream side of the backflow preventer must be flex line/PEX and/or stainless steel. Do not use copper or brass. Provide an approved funnel drain assembly with an approved air gap plumbed to a floor sink to provide drainage for the relief valve of the backflow device. 9. Copper and copper alloys such as brass may not be used downstream of the approved backflow prevention device for an RO system. (FC §4-101.14) 10. Well and septic systems must be finalized and approved prior to final permit approval.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
