Monterey Cheese, beef tacos, taquitos, grilled chicken, shredded lettuce, milk, cojita cheese, pinto beans in reach in refrigerator near hallway with an internal temperature of 47-54*F. Whole raw eggs stored on floor with an internal temperature of 72*F. Person in charge mentioned foods were placed in the unit over 6hrs prior to inspection. All cold temperature controlled foods should be held at 41*F or below. Person in charge discarded. Recommend checking temperature logs before utilizing refrigeration units, and obtaining a new refrigeration unit.

Reach in refrigerator near hallway with an ambient temperature ranging 47-54*F. Temperature controlled foods being stored at home and on counters due to limited space in units. Refrigerators should be large enough to hold all temperature controlled foods and be held at a temperature of 41*F. Owner mentioned they will be obtaining new units by re-inspection on 5/23/2023. Owner to provide inform me when units are installed. No temperature controlled foods to be held in unit until unit can hold an ambient temperature of 41*F or below. All foods to be held on ice or in neighboring unit at 41*F.

Establishment is operating on a limited menu. All customer orders are cooked to order. No cooling or new deliveries to occur until refrigeration capacities have been increased, and reach in refrigerator near hallway can hold an ambient temperature of 41*F or below. Foods currently cooling (spanish rice, al pastor, carnitas) were reheated to 165*F and will be held at 135*F or above until discarded at the end of the day. Foods stored at home are not to be sold (whole raw eggs). Re-inspection to occur by 5/23/2023 for refrigerator capacities. Owner to reach out upon installation and proper function of units. This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 0 Core Violations on this inspection. Discussed establishment procedures regarding: Cold holding temperatures, usage of thermometers, refrigerator capacities No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
