Construction Inspection. Walked with Chef and contractor. Project nearly complete. Establishment is approved to stock and train, but not to serve the public at this time. Correct the following items for Final: 1) Install an RPZ (ASSE 1013 such as a Watts 009) on water line to RO system at espresso machine. Ensure no copper is installed on the downstream side of the backflow preventer, and that a drain line is run from the vent line of the backflow to a floor sink in hard pipe. 2) Hard pipe all drain lines in bar; replace existing flex lines with PVC or similar. This includes espresso machine, beer drip trays, shelves for drying/draining dishware, etc. 3) Finish re-plumbing drain line to dump sink in beverage area. 4) Install drain line to RPZ for soda system (hard piped to floor sink with a 1” air gap). 5) Label RPZ backflow in mop sink room (for misting system). 6) Seal all gaps and penetrations in mop sink room, including at clean out, gaps in FRP, gaps at concrete water heater platform. 7) Seal gaps around all hand sink drain lines in kitchen. No County legal action will result from this inspection. Report emailed. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
